- 1 pound raw shrimp peeled and thawed
- olive oil
- 4-5 cloves garlic minced
- ½ of an onion
- 4 tomatoes seeded and diced
- 1 pound asparagus cut into 1 inch pieces
- 1 cup frozen peas
- 3 cups chopped fresh spinach
- 1 small package basil chopped (wait until end to chop or it will turn black)
- red pepper flakes to taste
- ½ 5 oz log of goat cheese crumbled
- ½-3/4 pound of pasta such as penne
- vegetable broth or cooking sherry or white wine (whatever you have)
- parmesan
1. Place shrimp in bowl with garlic and 1-2 Tbs of oil. Set aside
2.Place a small amount of oil (about 1 T) in skillet. Saute onions until tender (about 5 minutes). Add tomatoes and cook 3-4 minutes Season with salt, pepper and/or red pepper flakes.
3. Add about ¼ cup of either broth, sherry, or white wine. Let it slightly reduce (3-4) minutes.
4. Add asparagus and let cook 1-2 minutes before adding the shrimp. Add shrimp to pan and cook until almost done (3-4 min). Add spinach and peas and cook until spinach wilts. Add chopped basil and goat cheese.
Serve with pasta and add grated parmesan if you like.
